The Filipino Dessert Icon

Ube is a purple yam, yam is a different name for potato or carrot. Even though some people might find it similar, yam is more starchy and creamy when mixed with milk to make desserts. Ube is famous from the Philippines and within a year there are only two harvest seasons, which are usually in June and December and that is why it is treated so special!

The ultimate purple obsession is the Buenas Ube Purple Yam Spread. This is a sweet and deliciously creamy spread and is used as the perfect topping for the famous Filipino  “Halo- Halo” dessert. It is also often used in ice cream, icing or frosting, cakes, cookies, donuts, and commonly as a spread of sweetness on bread or any savory breakfast! Ube Pancakes

Give your pancakes an Ube taste & color. Kids will love it!

Ingredients

· Buenas Sweet Purple Yam (UBE) Spread

· 1 ½ cup all-purpose flour

· 2 teaspoons baking powder

· A little extra Ube extract/ flavoring

· 2 tablespoons butter

· 1 large egg

· ½ teaspoon salt

· 1 cup milk

Instructions

1. In a medium-sized bowl, mix the Ube Spread and half of the milk until the mixture is smooth.

2. You then add Ube extract, melted butter, eggs, and the rest of the milk. Mix all together until the eggs are fully combined.

3. In a different bowl, mix the flour, baking powder, and salt. Then add the dry mixture to your wet ingredients.

4. Mix until the flour has dissolved. Be careful not to over-mix

5. You then use a regular pan or skillet and lightly put some oil or butter into the pan. Make sure to place the pan on medium heat.

6. Pour some of the batter and once bubbles start to appear, flip the batter and cook the other side.

7. Once they are all done, place the cooked pancakes on a medium-sized plate and let it cool off for 3mins before serving.

8. Enjoy Ube purple pancakes!

 

Ube Cake Roll

Make a yummy purple whipped cream filling chiffon cake.

Ingredients

·  4 large egg yolks

·  1/4 cup sugar

·  1/4 cup milk

·  3 tbsp canola oil

·  1 1/2 tsp ube flavoring

·  3/4 cup all-purpose flour

·  1/2 tbsp baking powder

·  4 large egg whites

·  1/4 tsp cream of tartar

·  1/4 cup sugar

Ingredients for Delicious Ube whipped cream

· 1 and 1/2 cup whipping cream

·  2 tablespoons Ube Spread

·  2/3 cup icing sugar

Instructions

1. Begin by preheating the oven to a heat of 180 C. Smear a  medium baking pan with butter or baking spray and place the parchment paper.

2. In a large mixing bowl, use a whisk to mix the egg yolks until they are lighter in color. Combine the sugar and continue to mix until it becomes thicker. Now add the milk, oil, and ube extract to the bowl and combine well!

3. In a different bowl, mix the flour and baking powder. Then add this mixture to the wet ingredients and combine them by making sure your mixture has no lumps.

4. Combine the egg whites in a stand mixer until it has a foamy texture. Then add the cream of tartar and mix until it forms a soft creamy texture. slowly add the sugar into the mixer while it’s running and continue to mix until a more stiff/tough texture is formed. Pour the egg whites mixture into the egg yolk mixture using a rubber spatula, and combine well. Pour the mixture into the prepared baking pan. Bake for 10-12 minutes.

5. When it’s done slide the cake with the parchment paper onto a wire rack and allow it to cool. Once the cake is completely cool, remove the parchment backing. To do this, sprinkle powdered sugar on top of the cake. Place a piece of parchment paper that is just a bit bigger than your cake over it, and put a baking pan of the same size or bigger on top. Turn everything around onto the pan. Gently peel off the parchment paper from the cake. To turn the cake to its top side again, position another parchment paper on top of the cake, followed by another baking pan. Turn the cake around one more time onto the bottom side of the pan. The cake should now be resting on an inverted baking pan.

Instructions for Ube Whipped cream

1. Beat together whipped cream, icing sugar and Ube Spread with a whisk or stand mixer until its thick and fluffy.

2. Put some of the Ube whipped cream on the cake. Spread it out evenly but leave some space at the top and bottom edges. Lift the parchment paper that is the closest to you and begin to roll the cake until it is in a log shape. Press onto the cake to make the shape more stiff. Remove the parchment paper and spread the rest of the whipped cream all over the cake. Store in a cool dry place and ready to enjoy!

 

Ube Donuts

Purple up your donut!

Ingredients

· 1 cup all-purpose white flour

· 2 teaspoons baking powder 

· ¼ cup granulated white sugar

· ¼ teaspoon salt

· ½ cup almond milk (unsweetened)

· 1 egg

· 1 tablespoon oil (vegetable, canola or olive oil)

· 4 drops ube extract 

Ube Donut Glaze

· 1 cup powdered confectioner sugar

· ¼ cup heavy whipping cream

· 1 tablespoon Ube Spread 

Instructions

1. Heat the oven to 180 C

2. In a bowl mix baking powder, flour, sugar, salt, milk, egg, oil, and the delicious ube extract and combine well! You may use a whisk.

3. Pour the mix into a donut baking pan

4. Use an icing piping bag to pipe/pour the batter into the donut pan. This helps that batter does not fall on the sides of the pan and also creates a perfect donut shape.

5. Bake for 8-10 minutes

6. Let the donuts cool off for about 3mins and carefully remove the donuts and place them on a rack for cooling. Before glazing the donuts let them cool off for 10 more minutes.

Ube Donut Glaze

1. In another bowl, mix the sugar, heavy cream, and Ube Spread.

2. Use your hands to dip the donuts into the glaze. Make sure to dip them halfway in and then on the other side.

3. The glaze might thicken after dipping so if this happens you may add whipping cream to thin the glaze. And Enjoy!

 

Ube Pie

Just Some Puff Pastry & Ube filling.

Ingredients

· 1 package (2 sheets) frozen puff pastry thawed according to package instructions

· 1 large egg

· 2 tbsp milk

· 1 jar Ube Spread

· Cheddar cheese (optional)

· Macapuno (optional)

Instructions

1. Begin by setting aside a baking pan with parchment paper aside for later use.

2. In a bowl, beat one 1 with 2 tbsp milk and set aside as this will be used as an egg wash.

3. Lightly flour the surface where you will be rolling out your puff pastry and carefully roll out your puff pastry sheets. Cut them into rectangles using a knife(you should have 12 rectangles as 1 sheet gives 6 rectangles). Try to cut them into the same size.

4. Place 6 of your rectangles onto the prepared pan and have them spaced out accordingly.

5. Lightly brush some of your egg wash onto the edges of each rectangle

6. Dish out about 4 tbsp of Ube Spread into the middle of your pastry.

7. Place another puff pastry sheet on the top and use a fork to seal the edges of the ube pie.

8. If you’re looking to add different flavors you may add cheese or macapuno on the top of the Ube Spread before sealing the pies.

9. Take a small sharp knife and poke 2-3 cuts on the top of the pies so that air can escape while baking. Once more brush the top of the pie with the last of the egg wash.

10. Put the pies in the freezer while you setting the oven to a heat level of 200 C

11. Once the oven is ready, take the pies out of the freezer and place them in the oven. Bake for 30mins or until golden brown. Best served while warm & enjoy!
